For health reason, Hubby and I are on a low carbohydrate but tasty, healthy and balanced diet. When he retired in 2016, he said, “You have been cooking for me for twenty years. From now on, I’ll do all the cooking.” He has kept his words literally. We eat two meals a day. He makes a tasty and colorful brunch with eggs, fruit and vegetable. For dinner, he makes tasty salmon and different vegetables. Once in a while, he makes thin crust pizza and continues to improve on his secret recipe. Two or three times a year, we have barbecues with lean meat.

For dining out, I usually have seafood and he has steak. Basically, we stay away from fat and starchy food.

Tuesday Photo Challenge – Delicious

The theme for Tuesday Photo Challenge is Delicious!

My husband likes ultra-thin crust pizza. All the pizzas we have had in the restaurants or bought from the stores are not thin enough for him. When we visited Mercy, Will, and Autumn during Christmas, we finally went to a restaurant in Portland, Oregon that makes ultra-thin crust pizza to his liking.

Last year, He started making homemade pizza. He watched videos to get different recipes. He only gave me the ingredients of his first recipe. Since then he kept a secret for the changes he made in the subsequent attempts. By the fifth try, he considered that he had perfected his recipe for his desired thinness and taste of the crust.

As for toppings, he always wants extra cheese and extra pepperoni. Eating too much cheese upset my stomach, so my portion of the pizza was always different, depending on the vegetables available in the refrigerator. I used to like Canadian beacon, so for the first try, I asked to have a thin layer of cheese with pineapple pieces. Subsequently, when he made pizza again, I chose different vegetable toppings on my portion.

Whatever secret recipe he has, his homemade pizza is super delicious. Oh, we made blackberry pie to go with the pizza.

Into Perfection

First time homemade pizza

My husband tried to perfect his homemade pizza. The first time he made it was on April 15 this year as Easter surprise for me. Since then, he made it the second time, but it was too chewy. Two day ago, he did it for the third time. He was quite happy with it.

What he did differently than the previous two times was that, after he mixed the pizza dough, he left it out in room temperature overnight. The yeast in the dough raised it to a big ball. He put it back into the refrigerator the next morning until evening for cooking. Before he put in the topping, he brushed the bottom part of the pizza with olive oil.

 When it was done cooking, the pizza was crispier and the crust was tastier because of the two additional steps described above. As far as the toppings, the veggie portion was for me!

Well, I baked a Marion berry pie to go with the pizza!

Easter Eve Surprise

My husband gave me an Easter Eve surprise. He made his first ever homemade pizza from scratch. We went shopping together after lunch today. I knew he bought pizza ingredients – bread flour, yeast, tomato sauce, pepperoni, cheese, and canned pineapple.

I asked if he had a recipe. He said he did, but didn’t know when he would make pizza.

This evening, he decided to make it, all by himself without any help from me. I loved it – I didn’t have to do anything. My only help was to take out the rolling pin for him.

He made the dough, used the rolling pin to flatten the dough to the thinnest. He made 3/4 pepperoni and cheese for himself. I only wanted 1/4 with kale and pineapple.

He did the baking and slicing and served it to me. What a treat! What a nice surprise!

Thin Crust Pizza Recipe:

Ingredients

1/2 cup lukewarm water

1/2 teaspoon active dry yeast

1/2 teaspoon honey

1 & 1/2 cup all-purpose flour

1/2 teaspoon salt

Toppings: Monterey Jack or Mozzarella cheese, pepperoni, and any other favorite items

Procedure

Mix water, yeast and honey, and let the mix sit for 10 minutes

Stir salt into flour, pour water mixture into flour, and knead well, let dough sit for 5 minutes

 Sprinkle flour on baking sheet, then use rolling pin to flatten dough in circular or square shape, let dough sit for 5-10 minutes

Add toppings evenly on pizza dough

Pre-heat over in 400o

Bake for 10 – 15 minutes, or until cheese bubbles, and crust turns light brown

Slice pizza and serve
